I made a tank in my house it is just about 500 gallons of water. I have 9 fish in it. The tank has been running for 2 months. I have no ammonia, but i have .25 nitrite and it will not go down. What do you think - just not running long enough, or too many fish?

A little of both. Get some salt into your vat (1.5 pounds per 100 gallons should do it), keep it stable with frequent testing, and do water changes until the secondary bacterial cultures come online. You might also boost your filter culture with one of the bacteria preps from Microbe-Lift and some montmorillonite clay.
